Gonzalo is a biochemist who graduated from Universidad de La Frontera in Temuco, Chile. From 2020 to 2021, he worked as a research assistant in the Metabolomics Laboratory, focusing on healthy foods by evaluating their phenolic composition and antioxidant activity.
In 2022, he began his PhD in Chemistry at Pontificia Universidad Católica de Chile in Santiago under the supervision of Prof. Mario Aranda. His research explores how gastrointestinal digestion and gut microbiota influence dietary polyphenols and the formation of bioactive catabolites that may face chronic non-communicable diseases (NCDs).
